To produce the same amount of ground coffee in less time, a larger diameter burr requires just slightly less time to complete the grinding process for the same amount of beans. On the other hand, the flat burr grinders often produce more uniformly sized particles, resulting in a steadier pace of coffee extraction. This soaking makes for a more conventional, well-rounded espresso. Since conical burr grinders use gravity to “clean” the burr set, they discard less ground coffee during the grinding process. Since flat burr grinders store grinds in the burr set after the spinning stops, this may impact the flavor.
